we've been pretty busy lately with some new jams. it's a long process of sourcing the ingredients, writing recipes, testing and refining - with a fair bit of tasting involved - and then designing the labels.
here are some of our latest creations:
this is a sweet orange, made with the most amazing organic oranges from mildura. our neighbour at the sunday markets sells them. he was keen for me to eat the rind of the orange with some good dark chocolate. what a sensational combination, as orange and dark chocolate truly are made for one and other, so a marmalade was born.
onion marmalade is a pretty tasty one. so many onions in each jar. i must calculate, as they cook down so much.
this fig and buttered walnut jam has chopped vanilla pods, orange zest and lots of cinnamon - all great together and has proved to be a big hit at the markets.
i was so happy with this one - although it's really plain looking, it has a lovely flavour and was sensational with our roast pork the other night, but not selling so well...
